“Ripasso” is an ancient technique known in Verona which consists of “repassing” Valpolicella on the pomace of the dried grapes used to produce Amarone and Recioto, creating a fine wine with greater body and character.
40% Corvina, 30% Rondinella, 30% Corvinone
Valpolicella in the municipalities of Negrar, Fumane, San Pietro in Cariano, Marano
Recommended with feathered game, semi-aged cheeses, roasts, grilled or rotisserie meats.
Serve at 20°C in balloon glasses.
